Mantova Sabina PDO Extra Virgin Olive oil

Mantova Sabina PDO Extra Virgin Olive oil is produced in Italy in the territory of Sabina. An area between Rome and Rieti (north of Rome) that consists of 46 towns, our Sabina PDO extra virgin olive oil is produced. Its chemical, physical and nutraceutical properties, as well as its entire production cycle, follow a precise product specification approved by the European Union and the Italian Government and are monitored and protected by a Public Control Authority.
Sabina Extra Virgin Olive oil is known to be used by the Roman Empires and is known as one of the oldest olive oils in the history of Italy. Over 2000 years of harvesting and experience in this area has allowed this area to become one of the best tasting and healthiest Extra Virgin Olive oils in the world.
This ancient olive oil is obtained from a variety of olives, that include: Carboncella, Leccino, Raja, Frantoio, Olivastrone, Moraiolo, Olivago, Salviana, and Rosciola. The combination and blend of these olives make the fruity flavor we get in the Sabina olive oil. The maximum acidity allowed for the Sabina extra virgin olive oil is 0.6% while normal extra virgin olive oil is allowed to reach 0.8% acidity. While most Sabina Extra Virgin Olive oil remains at ~0.3% acidity.
Harvesting normally takes place between October 1st and January 31st of each crop year. Out of an estimated 4,000,000 liters of certifiable production, only about 300,000 liters are certified per year.
