Olive
oil is not only just a vegetable fat, but carries
a taste of its own and greatly enhance the flavor
of the foods with which it is used. Of all the pourable
oils, only olive oil meets consumers demand for both
taste and health benefits.
The
fact that other pourable oils lack a pleasing taste
gives rise to twofold advantage of olive oil over
every other fat: it has a more pleasant taste, its
great flavor allows us to use less oil and thus ingest
less fat.
Therefore
"taste means quality" and extra virgin olive
oils offer the best variety of tastes, achieved by
a winning combination of aromas.
Just
like we learn to distinguish table wine from an exceptional
Bordeaux, a good taster should concentrate on detecting
the various positive characteristics of each olive
oil variety and make sure to choose a "good tasting
olive oil"
